The Raaga Cookbook – Modern Indian Cuisine now

The Raaga Cookbook is now available for purchase at
Raaga and there will be a Book Signing at the restaurant
on Sunday, December 21, 2014 from 2 p.m. to 4 p.m.
Chef/Owner Pramod “Paddy” Rawal of Raaga Restaurant has
responded to numerous requests for recipes from guests
at his popular restaurant by writing his first cookbook.
Titled “The Raaga Cookbook – Modern Indian Cuisine”, it
is a celebration of the best in Indian cooking as
exemplified by the menu he serves in Santa Fe, New
Paddy credits his late mother with being one of his
earliest influences, as well as the many fine chefs
under whom he studied. To Paddy, herbs and spices have
always been the key ingredients, as is clearly
demonstrated in his creative and unique combinations.
His personal motto is “Fresh Flavors Redefined”, but he
is cognizant of his audience. He says “The recipes in
this book are not the usual restaurant fare, where it is
not unusual to sacrifice the palate to please the eye.
The delicacies, though exotic, are easy-to-make and a
veritable home cook’s delight.”
The cookbook, has a foreword by Chef Johnny Vee of Las
Cosas Cooking School and photographs by Douglas Merriam,
and was edited by Margo Chan Taylor.
